Ingredients for crumbled with flour and pistachio cream :
50 g sugar
60 g of butter
180 g flour
50 g pistachio flour
40 g corn starch
For the pistachio cream :
1 egg yolk
1 tablespoon of pistachio flour
1 tablespoon of sugar
250 ml of milk
2 generous spoons of pistachio cream
Methodfor crumbled with flour and pistachio cream :
Sand the flour with the butter, then add the egg, sugar and pistachio flour, vanilla and refrigerate.
Prepare the pistachio cream , everyone has their own recipe, this is a very simple one with the spoons roll out 3/4 of the dough, in a pan of 20/22 cm in diameter, add the pistachio cream and on top of crumbled pieces of dough.
The final touch ?! A little icing sugar and chopped pistachios before serving the cake.
